The heart of Greek cooking is to utilize what is around you, cook it simply and let the ingredients shine. While the restaurant will be respectful of Greek culinary traditions, it will also “break the rules” by exploring new possibilities for culinary self expression by utilizing New England sourced fish, meat and produce which might not usually be associated with Greek cuisine. Not being completely tied to tradition will allow the chefs the freedom to explore new techniques and a broader palette of ingredients with which to explore and expand upon Greek cookery.
The name Pelekasis is the Greek family name of chef Brendan Pelley. After more than 15 years of cooking professionally and exploring many cuisines chef Pelley realized that when he cooks with Greek flavors his soul truly shines through in the cooking.
